Definitely didn't do that. It just seemed that way in a few different LSs.
I was a valet at the time so I didn't drive them long but it seemed
consistent, and of the many cars that I was driving in the same situation I
had only noticed LSs acting as I described.

Even in the scenario you describe the brakes will still stop
the car, even it the throttle is floored, try it.

I wouldn't do anything so stupid and potentially destructive to prove a
point, however, I do agree with you. Still, that is the only thing I can
think of to explain his "engine overpowering the brakes" comment.

used to be one of the standard tests for a torque convertor - measuring
the engine revs attained with the convertor stalled.
However, some modern engine management systems won't allow the throttle
to be opened whilst the brake pedal is depressed, and a few management
systems are programmed to use this technique to achieve maximum launch.

Nothing to stop you using your left foot for the brake pedal - just
don't be surprised if the throttle gets cut when you do it!
In other words, you don't actually achieve anything by left foot braking
in a car which is configured like this.

The first time I tried to fly my S4 through a hairpin using the ol' heel 'n'
toe it damn near threw me through the windshield before washing out of the
turn. Yikes!
Didn't know WTF had happened at first, but a much slower speed re-enactment
proved that "brake kills throttle" behavior. It's still the only thing that
annoys me about this car.
It would have been nice to read about it in the owner's manual first
