the 5 speed is slightly quicker to 60 mph according to the bentley manual

I have a 2002 A4 3.0 manual with 6 speed tranny....

Yup B6 3.0 had 6 speed manual right from the beginning of the model cycle. The 1.8T, which the original poster was referring to, underwent the transition to 6 speed manual in the 2004 model year.

I'm not impressed with the performance if I need to floor it. It's pretty poor.
I need to drop it to 4th to get some good power. even droping it in 5th @ 100 is not good.

Only really when I'm doing 120-130 & I need to accelerate then I feel the power is decent when I'm in 6th.
