the 5 speed is slightly quicker to 60 mph according to the bentley manual

I have a 2002 A4 3.0 manual with 6 speed tranny....

Yup B6 3.0 had 6 speed manual right from the beginning of the model cycle. The 1.8T, which the original poster was referring to, underwent the transition to 6 speed manual in the 2004 model year.

Only really when I'm doing 120-130 & I need to accelerate then I feel the power is decent when I'm in 6th.

Doesn't matter what car it is, if you want max acceleration from any given speed, then you have to be an appropriate gear.

you have a 3.0. Of course its pretty poor performance.
