Default Coolant level Low Warning Light

I just finished changing the Timing belt on my 3.0 last night. I started it up and its running great but I'm getting the low coolant warning. I thought I had bled the system properly and it isn't taking anymore coolant in the reservoir. I drove it 50km today to drop it off at my regular audi tech and it didn't heat up past 90 as usual. I'm getting the guys to look at it today. But any ideas would be really appreciated. I did replace the water pump and the thermostat assembly.

Turns out I accidentally unplugged the coolant temp sensor when I moved the expansion tank to get at the right valve cover.

I was going to say that. My mechanic did the same thing.
