Yeah, GT35 on a 2.0L is a pretty narrow powerband...
GT28RS will put you around 300wHP - maybe 20wHP more if fully dialed in on meth. GT2871R will get you to 350wHP, 3071R to 430wHP, and the 3076R to 500wHP. IMO, 2871R is great on a stock engine with just rods, and the 3071R/3076R are good for a built 2.0L. My car is very responsive and drivable, yet still puts out some decent numbers. I'm more interested in building a well-balanced machine than a dyno queen, so the only way I'd move up a turbo is if it's an HTA 3076R (spool close to the 3071R, but will flow more than the 3076R).
If I were to do it again, I would buy a bottom-mount turbo kit from PAG Parts (Google, or search VW Vortex 1.8T forum for info). He also has a billet wheel version of the 3071R, which should spool a couple hundred RPM sooner than the stock one. Anything that you can't get from PAG, check out Integrated Engineering.
