I would do it using Bilstein adjustable controlled with an iPhone app

lol yeah, the Bilstein is nice, but also the most expensive, along with KW variant 3. Unless you're going to be tracking your car, I think it's not necessary.

I myself just bought a set of used ST coilovers, really just want to lower the vehicle a few millimeters.

ANy of the choices on the link you provided are fine, and the coils all share a very similar design with very similar construction materials.
