converting to sport suspension

I've got an 03 B6 Avant 3.0 w/o the sport suspension and wheels, and am wanting to convert it. Other than the 17" wheels, what else is involved? Just coil springs and shocks? How much lower is this setup than stock?

The sports package includes springs, shocks, bumpstops, sway bars, and a front crossbar for added stiffness. I'd say it's roughly 1.5" lower? Unless you're buying them used, I'd suggest you go aftermarket instead of buying OEM parts: Eibach springs would give you a ride height that is marginally lower than OEM sport, while you can choose between Koni (which you can set to softer than stock, or really quite hard depending on your preference), and Bilstein (which is hard than stock) shocks.

So I could concievably just install springs if I want to the lowered look?

Re: converting to sport suspension

Yes, but it's not recommended: OEM springs are too long for the shorter springs. You will be needing to replace them relatively soon, so most would suggest that while you've got the car on a lift, might as well change those for appropriate ones at the same time.
