I assume that you're talking about replacing the roof skin only; cutting out the entire roof structure and replacing it with a material that cannot be welded would be a ridiculously-expensive task, and almost assuredly much less safe. I can't imagine you saving much more than a couple of pounds by just replacing the roof skin.
If you haven't already, I'd highly recommend getting lighter wheels and brakes. You can shed some serious weight there, and pick up significantly-improved handling as a result. After that, I'd look at seats, removing spare wheel and tool-kit, exhaust (my turbo-back dropped 29lbs!

), and a lightweight battery. If you want to go hardcore, pull your A/C, strip your sound insulation, and get some lexan windows.
I'm down about 225lbs from stock, and have no carbon pieces on my car. Albeit, that's only because my hood is already aluminum, and no one makes a carbon hatch.
